Domaine Sébastien Dampt is a family estate based in the village of Courgis, in the southern part of the Chablis appellation, and is widely regarded as one of the most quality-focused and authentic producers working across the full range of Chablis appellations. Sébastien Dampt studied oenology in Dijon and took over the family domaine from his father Daniel Dampt in the early 2000s, progressively developing both the estate’s vineyard holdings and its winemaking philosophy toward greater terroir expression and lower intervention in the cellar. The domaine farms vineyards in Chablis village, Premier Cru and Grand Cru appellations, with the village-level Chablis serving as the foundational wine of the range. The village Chablis from Domaine Sébastien Dampt is produced from estate-farmed Chardonnay grown on the characteristic Kimmeridgian and Portlandian limestone soils of the Chablis appellation, with the vines trained low to the ground to benefit from the reflected warmth of the chalk-limestone terroir during the long, cool Chablis growing season. The wine is vinified in stainless steel tanks with indigenous yeasts, without malolactic fermentation in the classic Chablis style, preserving the appellation’s signature combination of racy acidity, oyster shell mineral character and pure, unadorned Chardonnay fruit. The 2023 vintage in Chablis produced wines of excellent concentration and vibrant acidity. Chablis as an appellation has seen consistent critical recognition from all five approved publications in recent vintages, with the region’s distinctive mineral precision and gastronomic versatility making it a reliable recommendation across restaurant and retail contexts. Pale straw with green highlights and a classically precise Chablis nose of green apple, lemon, oyster shell, chalk and an almost saline mineral freshness that is unique to the appellation’s Kimmeridgian limestone terroir.
