Ambrosia de Tupungato is a high-altitude boutique wine estate situated in the Tupungato district of Mendoza’s Uco Valley, producing single-varietal and single-vineyard expressions from carefully farmed plots at elevations above 1,100 metres on the volcanic and calcareous soils that distinguish the finest Uco Valley terroir from the broader Mendoza wine landscape. The Viña Única Cabernet Sauvignon represents the estate’s varietal Cabernet Sauvignon expression from a specific Tupungato parcel, produced with minimal intervention and a focus on expressing the combination of high altitude, volcanic mineral soils and the Uco Valley’s exceptional diurnal temperature range in a wine of distinctive freshness, mineral character and individual expression. The 2021 growing season in the Uco Valley was characterised by good natural balance between warmth and freshness, producing wines of excellent concentration and aromatic quality from the zone’s finest high-altitude parcels. Cabernet Sauvignon at high altitudes in Tupungato develops a distinctive character that separates it from the variety’s expressions in most other parts of the world: the long, slow ripening period enabled by the high altitude and wide diurnal temperature variation produces Cabernet of unusual aromatic freshness, fine-grained tannin structure and a cool mineral character that speaks to the volcanic soils’ specific mineral profile.
