Capoverso is a small, family-owned estate based in Montepulciano, Tuscany, dedicated to producing handcrafted wines that express the character of the region. The winery focuses on low-intervention viticulture, careful fruit selection and traditional Tuscan winemaking. Although best known for its Vino Nobile di Montepulciano and Syrah, Capoverso also produces a limited quantity of Vin Santo di Montepulciano, one of Tuscany's most historic dessert wines. Made from carefully selected Trebbiano Toscano and Malvasia grapes that are naturally dried before fermentation, the wine is matured for many years in small oak casks (caratelli), allowing it to develop extraordinary concentration, complexity and longevity.

Vinification: Grapes are harvested by hand and air-dried to concentrate sugars and flavours before slow fermentation and extended ageing in traditional small oak barrels (caratelli). This lengthy maturation creates a wine of remarkable richness, balanced by vibrant acidity and oxidative complexity.
