The 2023 growing season in the Eola-Amity Hills was characterised by a steady march in sugar accumulation with beautifully high natural acidity, producing wines of exceptional transparency and mineral clarity. For the Seven Springs Chardonnay, this vintage provided ideal conditions: the volcanic basalt soils of the site and its Van Duzer wind corridor produced grapes of excellent concentration and aromatic precision, fully captured through 00 Wines’ native yeast fermentation and minimal-intervention approach in the cellar. Pierre Millemann’s French consultancy ensures that every barrel retains the site’s geological character.

James Suckling awarded the 2023 Seven Springs 95 points, an impressive recognition for a wine positioned at the single-origin tier of the 00 Wines hierarchy.
