The 2020 Domaine Pattes Loup Chablis Premier Cru Butteaux Mise Tardive is a Chardonnay from one of Chablis' most highly regarded Premier Cru vineyards, produced by Thomas Pico of Domaine Pattes Loup. Since founding the estate in 2005, Pico has become one of the most influential figures in modern Chablis, earning a cult following for wines that combine organic farming, low-intervention winemaking and extended ageing to reveal the full character of Chablis' limestone terroirs. Butteaux is a Premier Cru climat within the larger Montmains sector on the left bank of the Serein River. The site is known for producing some of the most structured and age-worthy wines in Chablis, thanks to its Kimmeridgian limestone soils and relatively cool exposition. The term Mise Tardive refers to Pico's practice of releasing the wine later than is customary, allowing additional ageing before bottling and offering greater complexity and integration upon release. The 2020 vintage provided excellent fruit ripeness while preserving the freshness that defines top Chablis. The wine opens with aromas of preserved lemon, green apple and white peach, layered with notes of oyster shell, crushed chalk, dried flowers and subtle smoky nuances. On the palate, it is concentrated and intensely mineral, with vibrant acidity supporting a core of citrus and orchard fruit. Extended lees ageing contributes texture and depth, while the limestone-driven tension carries through to a long, saline and remarkably persistent finish.
