Champagne Antoine Bouvet is a boutique family-owned grower estate based in Mareuil-sur-Aÿ, with vineyards spread across the Premier Cru villages of Bisseuil, Mareuil-sur-Aÿ and Avenay-Val-d'Or in the Grande Vallée de la Marne. Established in the 1970s when Antoine Bouvet revived his grandfather's label, the estate farms around 5 hectares and follows environmentally conscious viticulture, with much of the vineyard managed according to biodynamic principles. Fermentation and ageing are partly carried out in oak barrels, producing Champagnes that combine richness with precision and strong vineyard character.

Les Monts de la Vallée is one of the domaine's flagship single-variety cuvées, produced exclusively from Premier Cru Pinot Noir. The wine is made from a single harvest (the current release is based on the 2015 vintage) and bottled as Brut Nature/Extra Brut with zero dosage, allowing the purity of the fruit and terroir to shine. Extended lees ageing contributes complexity while preserving freshness, making it a gastronomic rather than purely aperitif-style Champagne.

This Blanc de Noirs is powerful, structured and intensely mineral. The bouquet reveals aromas of ripe orchard fruit, citrus peel, dried flowers, brioche and subtle spice, with hints of herbal infusion and chalk. On the palate it is rich yet taut, offering flavours of baked apple, yellow plum, toasted almonds and lemon zest. The absence of dosage accentuates the wine's saline minerality, vibrant acidity and long, dry finish, making it particularly suited to the dining table rather than casual sipping.
