The Carillon family has been making wine in Puligny-Montrachet for generations, with roots in the village stretching back to the 17th century. The family domaine, long known as Louis Carillon & Fils, was one of the most respected names in the Côte de Beaune. The Split (2010) In 2010, the domaine was divided between the two sons of Louis Carillon — Jacques and François. Jacques retained the Louis Carillon name and the historic cellar, while François established his own independent label: Domaine François Carillon. This was a significant moment in Burgundy, as the Carillon name had been synonymous with benchmark Puligny-Montrachet for decades. François Carillon's Style : François set up his own winery in Puligny-Montrachet and quickly earned recognition for wines that are precise, terroir-driven, and restrained in their use of new oak. His approach favours expressing the minerality and tension of the Puligny terroir over overt richness or winemaking intervention The 2019 vintage in Burgundy was a warm, generous year producing wines of exceptional ripeness and concentration, yet the best producers retained freshness and balance. François Carillon's Folatières from this vintage is a standout. "Full lemon, rather reticent nose. Very faint reduction, significant weight and richness, with that tell-tale touch of liquorice, but not a waft of heat.
