Champagne Bourgeois-Diaz is the project of Jerome Bourgeois-Diaz, fourth-generation winegrower based in Crouttes-sur-Marne in the Vallee de la Marne. The estate holds Demeter biodynamic certification and works on a philosophy of non-intervention: indigenous yeasts, diverse vessel fermentation including oak, concrete and ceramic, and zero dosage throughout the range. The operation is small and the production volumes strictly limited. The 3C Trois Cepages is a blend of all three classic Champagne varieties: Pinot Noir (45%), Pinot Meunier (35%) and Chardonnay (20%). Vinification divides the blend across stainless steel (60%), oak barrels (20%), concrete (15%) and ceramic vessels (5%), ensuring complexity from multiple textural inputs. The current release originates from the 2022 base vintage and was disgorged in January 2025, with no dosage added. Lees ageing runs to approximately 27 months minimum. Biodynamic Champagne from artisan producers in the Vallee de la Marne represents a small but growing category for specialist buyers who seek out natural wine practices in Champagne. The 3C format, blending all three varieties without reserve wine additions at zero dosage, is a deliberate statement of vintage transparency. Bourgeois-Diaz has received coverage from the Wine Advocate and Gault & Millau among others, and the estate's small production creates genuine scarcity. Serve as an aperitif or alongside oysters, white fish tartare or mushroom dishes. The zero dosage and multi-vessel approach mean the wine is best approached with some aeration in a broad glass rather than a narrow flute. Has the structure to develop for three to five years in the cellar. Pale straw with a delicate, precise mousse. The nose is complex and expressive: white fruit, a hint of oak spice, fine bitters and an underlying mineral thread from the mixed-vessel fermentation. The palate is vivid and full of vertical tension, with citrus, hazelnut, gentle spice and a refreshingly dry, saline finish. |
