The Mezcal Machetazo Espadin is produced from Agave angustifolia, known as Espadin (meaning ‘sword’ in reference to the shape of its leaves), the most widely cultivated agave variety for mezcal production and the standard bearer of the category’s artisanal tradition. Espadin accounts for over 90% of certified mezcal production, providing the varietal foundation against which all other mezcal agave expressions are compared, but within the Espadin category, the variation produced by different growing regions, different cultivation periods, different roasting approaches and different distillation methods creates wines of very different character despite sharing the same botanical origin. Machetazo’s Espadin is produced from the San Luis Potosí terroir using the same traditional methods that define the Salmiana expression, providing a direct comparison between the two varieties from the same producer, production philosophy and regional character. Espadin from San Luis Potosí differs from the more famous Oaxacan Espadin mezcals in its mineral, dry highland character, reflecting the higher altitude and more arid conditions of the central Mexican plateau rather than the warmer, more tropical Oaxacan growing environment. The artisanal mezcal production process at Machetazo follows the steps that have defined traditional mezcal for centuries: the mature agave pinas (hearts) are pit-roasted in underground stone-lined ovens for several days, imparting the smoky, complex roasted character that distinguishes artisanal mezcal from industrial production; the roasted pinas are then crushed with a wooden mallet (the machetazo, which gives the brand its name) or a traditional tahona stone mill; natural fermentation proceeds in open wooden vats over several days; and copper pot distillation produces the final spirit at the natural strength of the distillation without addition of water. The entire process preserves the maximum individual character of both the agave variety and the producer’s specific approach.
