La Dominode from Domaine Jean-Marc et Hugues Pavelot represents one of Burgundy's most consistently praised overachievers: a premier cru from the unfashionable village of Savigny-les-Beaune that regularly rivals village and premier cru Pommard and Volnay in quality, while attracting far less attention and considerably lower prices. The estate's two hectares of the vineyard, predominantly planted with 70 to 80 year old vines, were recognised by Neal Martin at the Wine Advocate as 'outstanding Savigny' and 'guaranteed to be long-term agers' in his 2014 assessment. The 2014 vintage in Burgundy is considered an elegant, cool-climate release that prioritised freshness and structure over the concentration of warmer years. These characteristics suit La Dominode particularly well: the vineyard's naturally firm tannic backbone and mineral acidity combine with the cooler year's natural freshness to produce a wine of exceptional precision and longevity. At a decade of age, the 2014 remains in the process of developing and has many further years ahead of it. Neal Martin awarded the 2014 La Dominode a score of 91-93 at the Wine Advocate and described the palate as possessing 'thickset tannin, very well judged acidity, lovely structure and symmetry with a long, mineral-driven finish that is totally satisfying.' Such descriptions have been consistent across vintages from Pavelot, building a reputation that now extends well beyond Burgundy specialists to a broad collector audience who have come to regard the domaine as a benchmark of quality and value. Open anytime from 2024 to 2035. Decant for one to two hours to allow full aromatic development. Pair with roast lamb, game birds, braised veal or aged hard cheese. This is a wine that rewards patience. Deep ruby with mature garnet highlights. The nose opens slowly with dark cherry, blackberry, crushed stone, sous-bois and a faint floral thread. The palate is medium-bodied with firm, well-integrated tannins, very good mineral-driven acidity and a long, detailed finish that carries spice and red fruit at length. Classic, structured Savigny built for the long term. |
