The Bourgogne Cuvee de Noble Souche is widely regarded as one of the greatest regional Burgundies produced anywhere in the Cote de Nuits, despite its humble Bourgogne Rouge classification. Domaine Denis Mortet, one of Gevrey-Chambertin's most celebrated estates, produces this wine from a single one-hectare parcel in the village of Daix, northwest of Dijon, at an elevation of 400 metres on hard limestone soils. The name, which translates approximately as 'noble rootstock,' refers to the quality of the original vine selections planted here.

The parcel comprises vines of significant age on limestone bedrock at altitude, producing Pinot Noir of naturally low yields and remarkable concentration for a regional appellation. In 2021, the wine was produced with 60% whole-bunch fermentation (the highest proportion yet) and aged 18 months in barrel with only 5% new oak, an approach that amplifies the fruit purity and aromatic complexity while avoiding over-extraction. The 2021 vintage across the Cote de Nuits was characterised by natural elegance and freshness from a difficult but ultimately rewarding growing season.

The Cuvee de Noble Souche's reputation rests on its consistent performance across vintages relative to its modest classification: multiple respected critics have noted that it drinks more like a serious village Gevrey-Chambertin or premier cru than a basic Bourgogne, at a fraction of the price. Allocations are limited and typically sold through established importers before reaching retail lists, making it one of the most sought-after wines in the domaine's entry-level tier. The Wine Advocate has scored the 2020 at 88, the 2022 at 88-89, and the 2023 at 90, suggesting consistent quality across the range.

Drink from 2024 to 2032. Pair with roast chicken, seared duck breast, wild mushroom risotto or mild aged cheese. Can be cellared comfortably for another five to seven years. Decant briefly before service.

Vivid, clear ruby. An exquisite bouquet shows fresh red cherry, crushed raspberry, dried rose petal and a fine mineral thread from the limestone plateau. The palate is elegantly structured, with fine-grained tannins, lively acidity and a clean, persistent finish of genuine depth for the appellation level. One of Burgundy's finest over-achievers.
