Tenuta Capofaro is the Aeolian Islands estate of Tasca d'Almerita, one of Sicily's most respected family-owned wine producers. Established on the island of Salina, the estate overlooks the Tyrrhenian Sea and is renowned for its dramatic terraced vineyards planted on volcanic soils. The Tasca family has been producing wine in Sicily for nearly two centuries and has played a pivotal role in elevating the island's reputation for fine wine through sustainable viticulture and meticulous site selection.

Capofaro is dedicated primarily to the indigenous Malvasia delle Lipari grape. While the estate is famous for its sweet Malvasia, the Didyme cuvée showcases the variety in a dry style. Named after the ancient Greek name for Salina ("Didyme," meaning "twins" after the island's twin volcanic peaks), the wine expresses the maritime climate, volcanic terroir and aromatic character of the island. Fermentation takes place in stainless steel, followed by approximately four months of ageing on the lees to enhance texture while preserving freshness.

The 2021 Didyme is made from 100% Malvasia delle Lipari. Unlike the estate's sweet wines, it is vinified completely dry, highlighting the grape's naturally floral perfume and vibrant acidity.

Bright straw yellow in colour, it offers aromas of white blossom, orange flower, Mediterranean herbs, citrus peel and ripe stone fruits. The palate is crisp and saline, with notes of peach, apricot, grapefruit and lemon zest framed by lively acidity and a pronounced volcanic minerality. Lees ageing adds subtle texture and complexity, while the finish is long, refreshing and distinctly maritime. This is an elegant seafood wine that beautifully reflects the volcanic island of Salina.
