Operating from Le Mesnil-sur-Oger, the commune widely regarded as the capital of Blanc de Blancs Champagne, Dhondt produces small-quantity wines that prioritise clarity of terroir over commercial volume. The domaine farms its vineyards with minimal intervention and relies on extended ageing on the lees to develop complexity before disgorgement.

Les Coullemets is one of the named lieux-dits within the Le Mesnil-sur-Oger Grand Cru appellation, a commune whose Chardonnay vineyards grow on the purest chalk subsoils in the Côte des Blancs. Pale gold with very fine persistent bubbles and an incisive nose of chalk dust, green apple, lemon zest, white flowers and a precise mineral salinity that speaks directly to Le Mesnil's pure chalk terroir. Light to medium-bodied on the palate with electric acidity, extraordinary mineral purity, a creamy mousse and a very long, austere, bone-dry finish. Requires patience; best from 2025 through 2035.
