COS is one of Sicily's most influential wineries and a pioneer of the island's natural wine movement. Founded in 1980 by three friends—Giusto Occhipinti, Giambattista Cilia and Cirino Strano—the estate takes its name from the initials of their surnames. Based in Vittoria in southeastern Sicily, COS helped revive indigenous varieties such as Frappato and Nero d'Avola while championing organic and biodynamic farming. The winery is renowned for its minimal-intervention philosophy, including spontaneous fermentation, the use of terracotta amphorae for many wines, and a commitment to expressing the unique limestone and red sandy soils of Vittoria. Today, COS is regarded as one of the benchmark producers of Frappato and Cerasuolo di Vittoria. Made from 100% Frappato, this is a light- to medium-bodied red that highlights the grape's aromatic purity and vibrant freshness. Fermentation is carried out with indigenous yeasts, followed by maturation in concrete tanks to preserve the wine's delicate fruit, floral perfume and mineral character. Low in alcohol (around 12%) and with minimal extraction, the wine is elegant, energetic and highly food-friendly, offering a refined expression of one of Sicily's most distinctive native varieties.
