Founded in 1980 by Giusto Occhipinti, Giambattista Cilia and Cirino Strano, COS is one of Sicily's most influential artisanal wineries and a pioneer of organic and biodynamic viticulture on the island. Based in Vittoria in southeastern Sicily, the estate has played a leading role in reviving the historic Cerasuolo di Vittoria DOCG, Sicily's only DOCG appellation. COS is renowned for minimal-intervention winemaking, spontaneous fermentation with indigenous yeasts, and ageing in traditional terracotta amphorae and large neutral oak casks, producing wines that express purity, freshness and their distinctive limestone and red sandy soils.
