Founded in 1829 in Aÿ, Champagne Bollinger is one of the region's most prestigious and historic houses. Established by Hennequin de Villermont, Paul Renaudin and Jacques Bollinger, the maison remains family-controlled and is internationally recognised for its rich, vinous style built around Pinot Noir. Bollinger owns more than 170 hectares of vineyards, with over 85% classified as Grand Cru or Premier Cru, an unusually high proportion in Champagne. Bollinger is renowned for preserving traditional winemaking methods, including fermentation in small, aged oak barrels, extended lees ageing and the maintenance of an extensive library of reserve wines stored in magnums under cork. Introduced in 2008, Brut Rosé is based on the Special Cuvée blend and enhanced with carefully selected still red wine from the celebrated La Côte aux Enfants vineyard in Aÿ. The result is a gastronomic rosé that combines freshness with the depth and structure that define the Bollinger house style. The NV Brut Rosé is typically composed of approximately 62% Pinot Noir, 24% Chardonnay and 14% Pinot Meunier, with around 5–6% still red Pinot Noir from La Côte aux Enfants added to achieve its colour and aromatic complexity. More than 85% of the grapes originate from Grand Cru and Premier Cru vineyards, and the wine spends over 36 months on its lees, significantly exceeding the minimum ageing requirements for non-vintage Champagne. Bright salmon-pink in colour with a persistent, fine mousse, the bouquet reveals aromas of wild strawberry, raspberry, red cherry and blood orange, layered with rose petals, toasted brioche, almond, baking spice and subtle mineral notes. The palate is medium to full-bodied, combining generous red berry fruit with vibrant acidity, creamy texture and Bollinger's signature vinous depth. Notes of citrus peel, pastry and chalky minerality lead to a long, refined and savoury finish, making it an outstanding food-pairing Champagne.
